Cheesy Creamy Cauliflower Soup

This one is so easy:

  • 1lb bag of frozen cauliflower
  • 2 to 4 tablespoons of butter or margarine
  • 1 cup of cheese (any kind you prefer, grated or chopped into small pieces. I used a grated mozzarella/something mix).
  • 2 cups of whole milk
  • salt & pepper to taste
  • garlic & paprika to taste


  1. place cauliflower in a sauce pan with garlic, butter, and milk and heat on medium flame or heat until cauliflower is thawed and soft.
  2. pour everything (put the cheese in now, it will melt with the hot cauliflower, etc.) into blender (or use an immersion/hand blender) and blend until smooth.
  3. sprinkle some paprika and grated cheese on top, perhaps some oregano or parsley as a garnish, serve hot and enjoy!
