Strawberry/Chia Peanut Butter Cookie Pie


  • 3 cups of fresh, sliced strawberries
  • 2 cups all natural peanut butter
  • 2 eggs
  • 2 cups Splenda┬«
  • 4 - 6 tablespoons chia seeds


  1. Make crust with a double batch of this cookie dough;
  2. roll out dough and line buttered/oiled/greased/pam-sprayed 9 inch pie pan with it;
  3. bake for 8 to 12 minutes;
  4. Allow pie shell to cool in fridge for 10 to 15 minutes;
  5. Spread on some more peanut butter in the pie shell (easier to do with a tablespoon or rubber spatula than a knife).


  1. slice strawberries;
  2. put 2 cups of sliced strawberries in the food processor with chia seeds;
  3. process until liquefied;
  4. fill pie shell;
  5. chill for at least one hour ;
  6. top with whipped cream or vanilla yoghurt and remaining sliced strawberries;
  7. serve with a nice cup of tea and Enjoy!
