No-Sugar Southern Peanut Pie

Southern Peanut Pie


  • 2 eggs, beaten
  • ½ cup all-natural, no sugar added, creamy peanut butter
  • ½ cup Splenda®
  • a generous pinch of ground cinnamon
  • a pinch of ground cayenne pepper
  • 1 cup Cary's lo-carb Syrup
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 - 1½ cups fresh, salted Virginia peanuts1).
  • 1 (9 inch) unbaked pie crust


  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a mixing bowl, blend together the eggs, peanut butter, sugar (Splenda®), light and dark corn syrup (Cary's syrup), butter and vanilla.
  3. Fold in peanuts and pour into pie crust.
  4. Toss more peanuts on top, perhaps crushed.
  5. Toss on a little sprinkle of cinnamon and cayenne pepper (go easy with the cayenne!).
  6. Bake 30 to 40 minutes or until set.
  7. Remove from oven and cool;
  8. serve with ice cream or whipped cream if desired, and a nice cup of tea.

I have increased some ingredient amounts, and substituted elements to make this a lo-carb recipe.
