 no sugar, gluten free, apple/cranberry/chia pie with peanut butter cookie crust

This pie is low in sugar and carbs, gluten free, healthy,


  • 2.5 cups splenda.
  • 1.5 cups all natural peanut butter.
  • 2 large eggs
  • 1/4 cup fresh cranberries
  • 5 tablespoons ground cinnamon
  • pinch of ground cloves
  • 12 ounces unsweetened apple juice concentrate
  • 2 small apples cored and thinly sliced
  • 1 cup of cranberry/apple juice blend
  • 1/2 cup chia seeds


First the cranberries:

  1. Take the half cup or cranberries, and two tablespoons of splenda;
  2. cover with water, stir up;
  3. microwave for 2 to 3 minutes so all berries pop open;
  4. place in blender.

Now the crust

  1. take 1.5 cups of splenda, 2 eggs, and q.5 cups of all natural peanut butter.
  2. mixwell and spread into the bottom and up the sides of an 8 inch pie pan.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Place pie pan in oven for 8 to 12 minutes.
  5. Remove pan when an inserted butter knife comes out clean.
  6. allow to cool for 20 to 30 minutes.

Let's complete the filling

  1. In a saucepan over medium heat, simmer the apples in cranapple juice until tender.
  2. Add 2 - 5 teaspoons of splenda, and a similar amount of ground cinnamon, and a pinch of ground cloves
  3. Stir well.
  4. Place in blender with cranberries, and chia seeds, blend until almost smooth
  5. Pour into crust.
  6. cool overnight (at least 6 hours), serve with nonfat, no sugar added Greek yogurt on top, and a nice cuppa tea!
