No Bake Grain/Gluten Free, Lo-Carb Chocolate Cookie Balls by Sleepy Time Gal

Ingredients

  • 1/3 cup granulated sweetener (use ZSweet or Swerve for low carb or coconut sugar for Paleo)
  • 10 drops vanilla liquid stevia
  • 1/2 cup whole milk (almond or coconut milk work as well)
  • 1/2 cup butter
  • 1/4 tsp salt
  • 1/4 cup unsweetened cocoa powder
  • 2/3 cup natural peanut butter (almond butter for Paleo)
  • 1/2 cup sesame seeds
  • 1/2 cup pecans
  • 1 cup unsweetened shredded coconut
  • 1 tsp vanilla
  • Crushed pecans or coconut for rolling

Instructions

  1. In a medium saucepan bring sweeteners, milk, butter, salt, and cocoa to a full boil for one minute.
  2. Add nut butter and stir until melted.
  3. Add seeds, nuts, coconut, and vanilla and mix well.
  4. Spoon the mixture by the tablespoon, roll into a ball, and roll in either crushed pecans, coconut, or both.
  5. These cookie balls can be eaten right away or chilled for a firmer ball.
