Mock Pecan (Pinto Bean) Pie

Ingredients:

  • 1½ c. sugar
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1½ c. cooked, mashed pinto beans
  • 1 whole egg, beaten
  • 2 egg yolks, beaten
  • 1 tsp. vanilla
  • 1 unbaked 9-inch pie shell

Instructions:

  1. Combine sugar and spices in a medium mixing bowl; mix well.
  2. Add beans, egg, egg yolks and vanilla; mix well until smooth.
  3. Pour into pie shell.
  4. Bake at 350 degrees for 15 minutes.
  5. Reduce heat to 300 degrees and bake 45 minutes or until set.
