Gluten-Free Apple Walnut Bread/Cake

Apple Walnut Cake


  • 1 cup almond flour
  • 2 cups golden flax meal
  • 3 eggs
  • 5 tbspns butter (room temp)
  • 3 apples
  • lotso cinnamon
  • pinch of ground cloves
  • pinch of nutmeg
  • dash of almond extract
  • tbspn vanilla extract
  • 1/2 tspn baking powder
  • 1 tblspn oil
  • 2 cups splenda
  • 1/2 cup chopped walnuts
  • 2 tbspns chia seeds


  1. Preheat oven to 300°F
  2. Dice apples and place in microwavable bowl with 2 tblspns cinnamon, pinch of cloves, pinch of nutmeg, and 1 cup Splenda®
  3. microwave apple mixture for 5 minutes
  4. pour apple mix into blender and blend until almost smooth.
  5. place flour, eggs, chia, baking powder, vanill extract, almond extract, oil, butter, and 1 cup Splenda® in mixing bowl
  6. mix well
  7. add apple mix to flour/dough mix and mix well
  8. add chopped walnuts
  9. butter a baking pan, sprinkle some Splenda® and cinnamon onto the buttered surface
  10. pour batter into a large shallow baking pan*
  11. top with apple slices, chopped walnuts, and a sprinkle more of cinnamon and Splenda®
  12. bake for 45 minutes to 1 hour or until a knife inserted in the middle comes out clean.

IMPORTANT NOTE: *The baking dish pictured is too small/deep, and the cake took way too long to bake in it (cooked bottom and edges, but interior was still a gooey mass).
Better you use something like a 12 inch casserole pan and keep the batter shallower, largely due to the high moisture content in this recipe.
I ended up scooping out the uncooked batter/dough into my muffin pan and making muffins, which came out nicely after all.
