Easy 3-ingredient sugar-free flourless peanut butter cookies

Peanut Butter Cookies


  • 1 cup peanut butter (smooth or chunky your pref.)
  • 1 cup splenda
  • 1 egg


  1. preheat oven to 350°F
  2. mix ingredients until well-blended
  3. shape dough into 1 inch balls on cookie sheet well-spaced
  4. bake for 8 to 10 minutes
  5. cool and serve with milk

Takes all of 20 minutes to make these, and they're healthy and delicious!


  • crushed pecans
  • sugar-free chocolate chips1)
  • Cary's® sugar-free syrup
  • sunsweetened, shredded coconut

I've done this:

  1. I added an extra egg, a little more peanut butter (c. ½ cup), and a table spoon of margarine, plus a couple table spoons of baking cocoa, then;
  2. rather than ball this into cookies, I spread the dough into a 9 inch pie pan, c. ½ inch deep.
  3. sprinkle on generous portions of crushed pecans, shredded coconut, and sugar-free chocolate chips;
  4. drizzle on some sugar-free syrup;
  5. In this case, I end up baking it a little longer (12 to 15 minutes);
  6. then cut the BAC2) into 6 to 8 wedges.
