Healthy Gluten Free -- Low Carb Chicken Nuggets

Ingredients

  • 1.5 pounds skinless, boneless chicken breast (organic if possible) cut into bite size pieces
  • 3 cups almond flour
  • 1/2 cup chia seeds
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • ½ teaspoon basil
  • 2 cloves minced garlic
  • 3 eggs

Alternative

  • use flax seed flour instead of almond flour
  • instead of basil/oregano, use chipotle powder, and/or chili powder, or sazon goya con achiote o con azafrán
  • paprika
  • comino molido (ground cumin)
  • garlic powder
  • adobo

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly grease a baking sheet or baking pan.
  3. Heat a skillet/fry pan with olive oil
  4. In a medium bowl, mix flour and chia seeds, spices, etc.
  5. In another, separate medium bowl, place eggs and mix well.
  6. Line up the bowls and place each piece of chicken into egg mixture, then flour/chia/spice mixture.
  7. Place in hot olive oil to fry, flip after 4 to 5 minutes
  8. When both sides have fried to a golden colour
  9. Lay onto prepared baking sheet in the oven until all the chicken is used.
  10. Discard any remaining egg or flour mixture.
  11. Bake chicken for another 15 minutes or until cooked through, making sure to turn over once halfway through. Serve immediately atop a nice green salad.
