Cheesy Turkey Meatloaf


  • 2lbs ground turkey
  • 1 green, 1 red, and 1 yellow bell pepper, all diced
  • 1 large yellow onion, diced
  • 2 tblspns adobo
  • 2 pouches sazon goya con achiote
  • 2 tblspns oregano
  • 1 tblspn paprika
  • 1 tblspn salt
  • 1 tblspn black pepper
  • 3 tblspns minced or crushed garlic
  • 2 eggs
  • 4 cups shredded mozzarella or cheddar cheese


  1. preheat oven to 400°F
  2. mix turkey, diced veggies, spices, eggs, 2 cups cheese, etc. in large mixing bowl (I mix with my hands - be sure to wash them both before & after if you do the same!!)
  3. place meatloaf mixture in large casserole baking dish pam-sprayed (I have a 9 x 13 glass casserole I used).
  4. bake meatloaf for 45 minutes until meat is nearly all cooked and internal temp is at least 165°F
  5. sprinkle remaining cheese, and a bit more of oregano on top and put back in oven for another 10 to 15 minutes to melt cheese
  6. I served mine with sautéed collard greens (a bit of garlic, salt, olive oil, sautée for 5 to 10 minutes until just tender), and kidney beans (all day in the slow cooker with garlic, salt, 1 medium yellow or white onion diced, ground cumin, paprika, black pepper)
  7. Left-overs make a good sandwich with spinach, tomato, and more melted cheese.
